Roasted Cauliflower

Lately I have been able to find cauliflower in a rainbow of colors. White (of course), green, orange and purple cauliflower have caught my attention.  I LOVE roasted cauliflower.  Simply divide the head of cauliflower into florets, drizzle with olive oil, kosher salt, pepper, garlic and roast in a 400* oven :)
